Simple Egg Curry Recipe | How to Make Egg Curry


Egg curry was used to be a feast in childhood when egg was not so commonly used in north indian vegetarian families.
This is my father's recipe. He used to add boiled potato as well in this recipe, but i just skipped to add boiled potato in egg curry as i do not like potato to be added in every north indian sabji :)
In original recipe, boiled eggs were fried in the kadhai but i just shallow fry eggs to avoid much oil in my dish.
There can be many other variations to egg curry recipe, but, as the eggs are fried first in this recipe, it becomes a special egg curry recipe to me..

Preparation for Egg Curry Recipe





  • Egg : 4 - 5
  • Salt to taste
  • Red Chilli Powder : 1/2 tsp
  • Onion : 1
  • Tomato : 2
  • Cumin Seeds : 1 tsp
  • Asafoetida : 1 pinch


  • Coriander Powder : 1/2 tsp
  • Turmeric powder : 1/2 tsp
  • Curd : 1 tbsp
  • Cooking Oil : 1 tbsp
  • Ginger Garlic Paste : 1 tsp
  • How to Make Egg Curry at home

    Boil the egg. Break the shell and keep the eggs aside.
    Make a paste of onion and tomato. If yo wish, add green chilli in this paste.
    Heat oil in a pan and shallow fry the eggs. Keep aside for cooling. When cool, cut a vertical slit in the eggs.
    In the same pan, add cumin seeds and let them crackle.
    Add corinader powder, turmeric powder, red Chilli powder and fry for 30 seconds.
    Add ginger garlic paste, salt and onion tomato paste in the pan. Cook until the paste starts seprating from the oil.
